Super Salad for the Season....

Tonite I did something I haven't done in years. I made one of my famous salads that used to go faster then the other dishes during cookouts. Remember this was before I had ever met my sweety-Doug, and I was a younger version of who I am today. I kind of cheated, and picked up pre-cut lettuce so it wouldn't take as long to finish, as it was, it took me a half an hour to do everything. Here are the ingredients. Enjoy.

1- 8 oz bag of plain lettuce- 1 bag of iceberg lettuce/ with the carrots, and cabbage bits in it.

1 -10 oz jar of real bacon pieces

2-oz/ 5 or 6 scallions with tops and roots trimmed off a bit, but enough top left for added flavor.

6- fresh mushrooms, sliced and diced.

1-8 oz pkg. of shredded cheese.

1-medium size sliced cucumber. quarter it lengthwise, and slice into 1/8'' pieces, or whatever size one likes.

1- colored pepper- the red, yellow or orange ones have the sweetest flavor, I like the orange ones myself.

2- Roma tomatoes, they may be smaller, but they have a richer, but mellow flavor. Cut into 10 or 12 slices per tomato.

1- Big-ass bowl, as it takes a lot of room.

1-bottle of salad dressing, your choice, but we tried the Asian-sesame seed dressing, and it was Awesome!

Mix the first five ingredients together first, mixing after adding each ingredient, to make sure each area is blended well. and then add the cucumber, pepper, and tomatoes, as they are wet ingredients and tend to make lettuce soggy if added first. After all the ingredients have been added, and stirred together, add about a half cup of dressing to it, and stir together, and add about a half cup on the top when done. Refrigerate for about an hour so it has time to absorb all the flavors, but not get soggy. For those of us who have bad teeth, this makes it easier for us to chew,but doesn't destroy the textures we enjoy.

Needless to say, we all loved it, and it will be lucky to make it thru tomorrow. For the vegetarians, one can leave the bacon out, and substitute a small can of drained black or green olives, if one likes. Bon' Appetite my friends!

I have also used ham chunks, cheese chunks, radishes, and sesame seeds as well. Just not in this particular salad. lol

well, now ya have a recipe to use, when you are in the mood for a REAL salad. I'm going to be doing another article on what I call my Fluffernutter salad. A recipe my mother-in-law taught me. Another simple and easy to make, sweet tooth soothing salad.
